    Hello, thank you so much for this video😭 I’m a beginner bread maker and I always wondered why my breads always doughy after 40 minutes in the oven! apparently I haven’t activated my yeast properly!! I’m trying it now as we speak after i made a batch of homemade garlic bread that’s doughy on the inside. It’s a waste of flour but oh well. If I never made mistakes I’ll never learn I guess!😭

      Doughy on the inside? If your yeast isn't activated, it would be super flat. Is that what you are seeing? If it's raw dough in the middle it's just not cooked long enough.

      I didn't cover the omega 6 and 3 issues here but I do on my site. I still choose.grain fed but have cut vegetable oil out of my diet and fast food since most people are getting their massive overload of 6 from processed food.

    I see that you are still replying ! 8:20 after letting it sit, my dough does not look like that. It does rise double the size but its sooo sticky. I do knead it for quite a while and even put more flour but it always stays way too sticky. 😭 bread still comes out good but I know im not doing it right. I hope you reply!!

      Yes I still answer! If your dough is too wet we likely have an issue with how you are measuring your flour. It could be a different grind of flour or it could be your humidity levels where you live. Dough has to have lots of adjustments based on environment. I'd suggest using the gram measurements instead. You can find those in the recipe on my website linked in the description box. Get yourself a scale (they're cheap) and weigh everything. You should get a more accurate result.

    I want to try this but I need to know what part of the country you are in because I'm on the Gulf Coast and our temps are high and so is the humidity. I've found rise times are shorter because it will over proof. Thanks.

      Hey there! I'm in Kentucky. If you are super hot then yes, you would probably want to shorten your rise times some if your A/C isn't on. I still do a regular 8 to 10 hour regular ferment in the house in summer as long as it's not over 83-85. My bread always does fine.

    I have made this several times. Always comes out perfect. However, this time, I added a small bunch of finely chopped parsley and two tablespoons of whole Thyme. Wonderful and a little different. This really is the only bread recipe I follow these days, and add some extra touches. I live out in the middle of nowhere, so can only shop at our local, very small, country grocer. If I need most things, it is a several hours drive into a different state, to shop. Being now able to make lovely bread is so welcome. Thank you so much for this recipe.

      Bread flour adds better structure and makes a lighter loaf. You can use all AP on this loaf just know it will be a tiny bit more dense.

      I do it in a pot on the stove just very gently until the chill is gone. Water bath not necessary, and the microwave makes hot spots.

      You could use more beans if you wanted to, or any other vegetable that would cook in about the same time. Zucchini or squash would both work just fine if you like either of those.

      Yep. And it's a big answer so hold on... They are vastly different, and it starts with the yeast. Sourdough is made with a living yeast. A blend of natural yeast and lactobacillus that is grown from what occurs in the environment and what lives naturally on the wheat used to make a starter. This yeast has the amazing ability to break down wheat, unlocking the nutrients stored in it and neutralizing anti nutrient compounds while also digesting and breaking down some of the gluten. Sourdough has been around since the Egyptians and is a fermented food. It doesn't have probiotics in it when you eat it (that's a lie) because they all die during baking but it makes wheat based flour vastly more nutritional and easier to digest. The bread is this recipe is made with a single cell yeast created in China. It's mass produced and has been for decades. All it does is make carbon dioxide when it comes in contact with water and the ingredients in the bread causing lift but not doing anything to modify the wheat itself. The nutrients are not unlocked and the anti nutrients remain present. There's virtually nothing healthy or good about this style of bread except that it's free from store bought bread's inflammatory oils and the preservatives that make it shelf stable for months at a time. I always say it's like the difference between a strawberry flavored Twizzler and a real strawberry. I'd take sourdough all day long over traditional bread loaves but everyone starts somewhere. ;)

      It will but the sugar here isn't just for sweetness. It also helps hold moisture and supports structure. This is an enriched dough much like challah or brioche (but not quite as rich).
